Tea from Japan
To create the famous Gyokuro, known as “Delicate Dewdrop”, long rows of closely planted tea bushes are shaded for 20 days with nets (Kabuse) or rush mats. This causes the plants to produce more chlorophyll and less tannin, turning the leaves a deep, dark green.
To produce the famous Matcha used in Japanese tea ceremonyies, the best Sencha leaves are selected and ground to the finest powder with a stone mill.
